Instructions
Heat fruit in a pot over medium - high heat, stirring occasionally, until the fruit is heated through and begins to break down and bubble.
Use a spoon or potato masher to mash the fruit to your desired consistency…. I actually used my immersion blender and it worked well.
Stir in the chia seeds and lemon juice until combined. Then taste and stir in 1 or 2 tbs sweetener if needed.
Remove from heat and let cool for 5 minutes. The jam will thicken considerably as it cools.
Give the jam one final good stir. Then serve immediately, or transfer to a sealed container and refrigerate for up to 1 week or freeze for up to 3 months

This is the perfect berry jam that you can feel good about eating! It takes very little time and effort and lasts for a long time! This is great to serve for brunch or to bring as hostess gift when invited to someone home for brunch.
