Roasted Broccoli Almond Salad

Ingredients

Ingredients For Salad

  • 1 head broccoli chopped stems included
  • ½ cup almonds
  • ½ lemon
  • 1 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp cumin

Ingredients For Dressing

  • 2 tbsp olive oil
  • 1 piece garlic minced
  • 2 tbsp honey
  • 1 tbsp Dijon
  • ½ lemon juice
  • 1 tsp balsamic vinegar

Instructions

  • Pre-heat the oven to 425F.
  • In a bowl add broccoli, olive oil, garlic powder, cumin, salt and pepper. Mix these all and then coat the broccoli. Transfer to a baking tray and bake for 15-20 minutes.
  • At same time small baking dish bake almonds whole for 8-10 minutes.
  • Remove almonds – let them cool and then chop up.
  • Slice lemon into four thin slices, then cut into eighths.
  • Whisk dressing ingredients together - add broccoli, almonds and lemon slices and combine all together and transfer to serving dish.
