Asian Chicken Meatball Soup

Ingredients

SOUP

  • 8 Cups Bone Broth
  • 2 large scallions cut into 2-inch pieces
  • 2 garlic cloves smashed
  • 1 3-inch piece fresh ginger, cut into 1/4-inch slices
  • A pinch of salt

MEATBALLS

  • 1 pound ground chicken
  • 2 small scallions minced or finely chopped
  • 2 heaping tbsp finely chopped fresh cilantro
  • 2 tsp very finely grated or minced fresh ginger
  • 1 tsp toasted sesame oil
  • 4 tsp tamari
  • 1/2 tsp kosher salt
  • 4 baby bok choy cut into quarters

Instructions

  • Combine the bone broth, scallions, garlic, ginger and salt in a pot or French oven. Bring the mixture to a boil, then reduce heat to maintain a low simmer, cover and now prepare the meatballs.
  • Meatballs - in a medium bowl, mix together all the meatball ingredients making sure everything is evenly combined. Wet your hands, this will ensure the mixture doesn't stick, and roll into 24 small meatballs.
  • Remove aromatics from the broth (either by straining or pulling them out) add the meatballs and simmer for 5 minutes or until cooked through.
  • Add the bok choy, and simmer for 1 minute.
  • Serve and enjoy!
