Combine the bone broth, scallions, garlic, ginger and salt in a pot or French oven. Bring the mixture to a boil, then reduce heat to maintain a low simmer, cover and now prepare the meatballs.
Meatballs - in a medium bowl, mix together all the meatball ingredients making sure everything is evenly combined. Wet your hands, this will ensure the mixture doesn't stick, and roll into 24 small meatballs.
Remove aromatics from the broth (either by straining or pulling them out) add the meatballs and simmer for 5 minutes or until cooked through.
Add the bok choy, and simmer for 1 minute.
