Pumpkin Chocolate Chip Cookies

Ingredients

  • 1 egg
  • ½ cup coconut sugar
  • 1 tsp vanilla
  • ¼ cup coconut oil melted and cooled
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • ½ tsp baking soda
  • 1/3 cup dark chocolate chips
  • 1/4 cup pumpkin purée
  • 2 tsp pumpkin spice

Instructions

  • Preheat the oven to 350 F, prepare a baking sheet with parchment paper or a silicone mat.
  • In a larger mixing bowl, add the pumpkin puree with the egg, coconut oil, vanilla and coconut sugar.
  • Add in almond flour, coconut flour, pumpkin spice and baking soda to your bowl and mix together all ingredients until nicely combined.
  • Fold in chocolate chips. Form dough into tbsp balls, place onto baking sheet and flatten with fingertips or a spatula.
  • Bake 12 minutes, or until edges are golden, remove and let cool before serving, enjoy!
  • Optional: sprinkle flakey salt on top!
