Lemon Parsley Grilled Chicken

Ingredients

  • 4 chicken breasts sliced in half to make thinner
  • 3 tbsp olive oil
  • 1 tbsp dijon mustard
  • 1 tsp garlic powder
  • Zest of 1 lemon
  • 2 tbsp Italian parsley chopped
  • Juice of 1 lemon
  • Sea salt & pepper

Instructions

  • Preheat oven to 375F and prepare a grill pan or skillet. This recipe can also be made on the barbeque, in which case pre- heat barbeque to medium-high heat.
  • Clean and dry chicken. In a large mixing bowl combine all ingredients EXCEPT lemon juice and evenly coat chicken.
  • Let chicken marinate for at least 30 minutes or up to 24 hours. Right before you are ready to cook add the juice of 1 lemon and coat evenly.
  • Heat oven safe grill pan or cast iron over medium-high heat, add some avocado or olive oil cooking spray and grill chicken 3-4 minutes each side and then transfer to oven for 8-10 minutes or until chicken is cooked through.
  • Garnish with a little extra drizzle of lemon juice, lemon zest and parsley and ENJOY!
