Mexican Corn Salad

Fresh and easy salad to accompany any meal.

Ingredients

RECIPE

  • 1 bag frozen organic corn
  • 1 tbsp avocado oil
  • 3 green onions sliced thinly
  • 1/8 cup cilantro- chopped finely
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • ½ lime
  • Salt & Pepper

Instructions

DIRECTIONS

  • In a large Skillet add oil and heat up. Add corn and sauté for about 3-4 mins until corn begins to brown and crisp up a bit
  • Add in all spices and sauté another minute or so. Add in green onion and mix around for an additional 2 minutes
  • Add in cilantro and mix around for no more than 1 minute and the remove skillet from heat.
  • Transfer to serving dish and just before serving squeeze a little lime juice and sprinkle some extra cilantro and enjoy!
