Mexican Corn Salad
Fresh and easy salad to accompany any meal.

RECIPE
- 1 bag frozen organic corn
- 1 tbsp avocado oil
- 3 green onions sliced thinly
- 1/8 cup cilantro- chopped finely
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
- ½ lime
- Salt & Pepper
DIRECTIONS
In a large Skillet add oil and heat up. Add corn and sauté for about 3-4 mins until corn begins to brown and crisp up a bit
Add in all spices and sauté another minute or so. Add in green onion and mix around for an additional 2 minutes
Add in cilantro and mix around for no more than 1 minute and the remove skillet from heat.
Transfer to serving dish and just before serving squeeze a little lime juice and sprinkle some extra cilantro and enjoy!
