Mashed Cauliflower

Easy mashed cauliflower to replace mashed potatoes.

  • 1 head of organic cauliflower
  • 1 tsp ghee or olive oil
  • 3 tsp chicken broth
  • 1/4 tsp sea salt & pepper to taste

Directions

  • In a large pot, boil water and throw in the cauliflower or use a steamer. Boil for about 12-15 minutes. Stab it with a fork to make sure it is soft.
  • Add steamed cauliflower to a high blender or food processor and add ghee/ oil, chicken broth and salt/ pepper. Alternatively you can add to a large mixing bowl and mash with a potato masher or immersion blender.
  • Blend it up or mash and enjoy on its own or as a topping on Shepard’s pie!
