GLWGRLS Mashed Cauliflower

Mashed Cauliflower

Cauliflower has been having it’s moment over the last few years because of its starchy texture without the carbohydrates and calories. I am always looking for lighter and non starchy side dish options to pair with my mains. You may have seen an earlier recipe for my mashed sweet potatoes, one of my fave fall / winter side dishes. I also make this dish with cauliflower. It is a perfect substitute for mashed potato and works well if you follow food combining.

I use an immersion blender to puree my cauliflower, but you can use a fork or potato masher or even a blender. This dish is lite, tight and easy to make.
