1red onioncut into ½ inch rings, halved lengthwise
5garlic clovespeeled and minced
4fresh thyme sprigs
1/2tspchili flakes
2tbspavocado oil
2tbspmaple syrup
Salt and pepper
Instructions
Pre-heat the oven to 425F, prep baking tray with silicone mat or parchment paper.
Place the squash, red onion, garlic, thyme and red pepper flakes into a large bowl. Add in avocado oil and maple syrup. Sprinkle generously with salt and pepper, toss to coat.
Transfer to prepared baking tray, spread out evenly and roast in the oven for 25-30 minutes or until starting to brown. Serve and enjoy.

This dish is the perfect blend of flavours, and can be made with butternut squash as well.
