Tara's Maple Thyme Squash

Course Side Dish
Prep Time 15 minutes
Cook Time 30 minutes
Servings 4 people

  • 2 medium squash cut into ¼ inch slices, halved lengthwise, seeded. Can use Delicata or Acorn
  • 1 red onion cut into ½ inch rings, halved lengthwise
  • 5 garlic cloves peeled and minced
  • 4 fresh thyme sprigs
  • 1/2 tsp chili flakes
  • 2 tbsp avocado oil
  • 2 tbsp maple syrup
  • Salt and pepper

  • Pre-heat the oven to 425F, prep baking tray with silicone mat or parchment paper.
  • Place the squash, red onion, garlic, thyme and red pepper flakes into a large bowl. Add in avocado oil and maple syrup. Sprinkle generously with salt and pepper, toss to coat.
  • Transfer to prepared baking tray, spread out evenly and roast in the oven for 25-30 minutes or until starting to brown. Serve and enjoy.

This dish is the perfect blend of flavours, and can be made with butternut squash as well.

  1. I made this and I could tell it would be delicious with less chili flakes, but it was almost inedibly spicy as written. Wondering if there is a typo and the recipe is supposed to include 1/2 teaspoon of chili flakes instead of 1/2 tablespoon? Just wanted to give the heads up! Can’t wait to make again and try with less ❤️
