Heat a pan to medium, high heat and add some of your favourite cooking spray or avocado oil. Once warm add in mushroom, pepper, zucchini and sauté 2-3 minutes. Add in garlic powder and continue cooking another 4-5 minutes until vegetables are cooked to your liking.
Heat up your tortilla wraps however you’d like. I have a gas range and like to just warm them up on each side for about 30 seconds. It works perfectly on the Siete wraps.
Once tortilla wraps are warm, spread 2 tbsp of hummus onto center of the wrap and top with cooked veggies. Add olives and spinach or arugula on top (if using).
Wrap it up and eat it like a taco! If you are using larger wraps you can fold it up nicely and cut in to sushi like pieces… it’s very satisfying to eat it this way.
