Pre-heat the oven to 300F
Cover a baking sheet with parchment paper
In a small pot on medium heat, add honey and coconut oil whisking until liquified remove from heat add in cinnamon and whisk together until combined.
In a large mixing bowl pour in the oats, hemp, chia and shredded coconut and add in the coconut oil honey mixture stirring together until coated.
Spread evenly on baking sheet
Bake for 10-12 minutes, make sure to keep an eye on it every few minutes to check it's not getting too brown as it tends to burn quickly.
Remove from the oven and let cool for 20 minutes - will be crunchy!
Can be served with yogurt, overnight oats, as cereal! Enjoy!
