Roasted Mushroom Leek Zucchini Side Dish

Ingredients

  • 2 zucchinis halved & sliced
  • 1 package cremini mushroom quartered
  • 1 large leek sliced
  • ΒΌ cup dill
  • 2 tbsp lemon zest
  • 2 tbsp avocado oil
  • 1 tsp oregano
  • 1 tsp garlic powder
  • Sea salt & Pepper

Instructions

  • Preheat the oven to 400F. In a large mixing bowl combine zucchini, mushrooms and leeks. Add avocado oil, salt, pepper, garlic powder and oregano. Toss and coat veggies well.
  • Pour tossed vegetables into a baking dish or pyrex and bake for 20-25 minutes, until vegetables are tender and golden.
  • Remove from the oven, let cool for 5-10 minutes and top with dill and lemon zest, mix well, serve and enjoy!
