Preheat the oven to 400F. In a large mixing bowl combine zucchini, mushrooms and leeks. Add avocado oil, salt, pepper, garlic powder and oregano. Toss and coat veggies well.
Pour tossed vegetables into a baking dish or pyrex and bake for 20-25 minutes, until vegetables are tender and golden.
Remove from the oven, let cool for 5-10 minutes and top with dill and lemon zest, mix well, serve and enjoy!
