3 Ingredient Vegan Thumbprint Cookies

Ingredients

  • 1 1/4 cup Almond Flour
  • 2 tbsp Coconut Oil melted
  • 1 1/2 tsp Maple Syrup
  • Raspberry Jam - Used a Chia one made with natural sugar

Instructions

  • Combine Almond Flour, Coconut Oil and Maple Syrup in a bowl and mix together until combined.
  • Cover with wrap and place in fridge for 30 minutes to 24 hours.
  • Pre-heat the oven to 375F and prepare baking tray with parchment paper or a silicone baking sheet.
  • Remove from the fridge and form into 1" balls (makes about 12-14 cookies)
  • Press thumb down in center and add approx. 1 tsp of jam on each cookie.
  • Bake for 10 minutes or until edges are golden brown.
  • Let cool and enjoy!
