Clean and cup of Cauliflower into small florets.
Pulse in blender in batches until "rice" like.
Let it sit and dry out for 10 minutes (can omit this step)
In a large pan add 1/2 TBSP avocado oil and scramble eggs. Cook about 3/4 of the way and then remove from pan and set aside.
Add 1 TBSP Avocado Oil and cook white onion about 3 minutes until just softens.
Add in Cauliflower, salt and chicken stock or water, mix all together.
Cover and let sit on Medium heat for 5 minutes.
Remove cover and let cook another 3-4 minutes, saute a bit.
Add in green onion, egg and soya sauce and mix together for about 2-3 minutes.
Serve and enjoy!
