Cauliflower Fried Rice

Ingredients

  • 1 Head of Cauliflower medium sized
  • 2 Eggs
  • 1 Small White Onion chopped small
  • 2 Green Onions sliced thinly
  • 2-3 TBSP Soya Sauce or Liquid Aminos
  • 3 TBSP Chicken Stock or Water
  • 2 TBSP Avocado Oil
  • Salt to taste

Instructions

  • Clean and cup of Cauliflower into small florets.
  • Pulse in blender in batches until "rice" like.
  • Let it sit and dry out for 10 minutes (can omit this step)
  • In a large pan add 1/2 TBSP avocado oil and scramble eggs. Cook about 3/4 of the way and then remove from pan and set aside.
  • Add 1 TBSP Avocado Oil and cook white onion about 3 minutes until just softens.
  • Add in Cauliflower, salt and chicken stock or water, mix all together.
  • Cover and let sit on Medium heat for 5 minutes.
  • Remove cover and let cook another 3-4 minutes, saute a bit.
  • Add in green onion, egg and soya sauce and mix together for about 2-3 minutes.
  • Serve and enjoy!
