Easy Smashed Crispy Potatoes

Ingredients

  • 12 small red or yellow potatoes Organic potatoes.. the smaller the better.
  • 1 tablespoon plus ΒΌ teaspoon fine sea salt divided
  • 4 tablespoons Avocado oil divided
  • 1/2 teaspoon garlic powder

Instructions

  • Pre-heat the oven to 425 degrees Fahrenheit.
  • Boil the potatoes for about 30-40 mins or until soft. Let them cool a bit.
  • Place avocado oil or olive oil and sea salt on base of a baking tray. Place boiled potatoes on the tray, smoosh- Can use your hand or can use the base of a measuring cup or glass.
  • Drizzle with avocado oil or olive oil, garlic powder and some sea salt and pepper.
  • Cook for 30 mins and flipping halfway through.
  • Top with chopped fresh parsley, chives and/or green onion.
  • Serve and enjoy!
