Pre-heat the oven to 425 degrees Fahrenheit.
Boil the potatoes for about 30-40 mins or until soft. Let them cool a bit.
Place avocado oil or olive oil and sea salt on base of a baking tray. Place boiled potatoes on the tray, smoosh- Can use your hand or can use the base of a measuring cup or glass.
Drizzle with avocado oil or olive oil, garlic powder and some sea salt and pepper.
Cook for 30 mins and flipping halfway through.
Top with chopped fresh parsley, chives and/or green onion.
