Kg’s Current Fave Summer Lunch

Course Salad

Servings 2 people

Ingredients

  • 4 Cups Romaine cut
  • 1 Avocado Cubed
  • 1/2 Cup Cherry Tomatoes halved
  • 1/2 Cup Cucumber halved
  • 1/2 Cup Broccoli cut florets in half
  • 1/4 Corn I use fresh or frozen and thawed
  • 1/2 Cup Chickpeas
  • 1/2 Cup carrots shredded

Instructions

  • Add all your salad ingredients to a mixing bowl.
  • Top with dressing of your choice, combine, serve and enjoy!

Notes

Dressing: I use my Green Goddess Dressing but you can use anything! Even just some Olive oil, lemon and sea salt & pepper is delicious!
