In a blender or food processor combine cottage cheese with banana, cocoa powder and honey or maple syrup. Process until smooth.
Transfer mixture to a loaf pan and freeze for at least 4 hours before serving. (To prevent crystallization, you can stir the mixture every hour x3. This is optional, but will result in creamier ice cream)
Let the ice cream sit at room temperature for about 10 minutes before serving. Top with your favorite toppings and enjoy
