Using a small paring knife, make a lengthwise slit in each date and remove the pit. You can leave the date as is or cut each in half.
Spoon about ½ tablespoon of seed or nut butter into each date.
Place the filled dates on a lined plate or baking sheet and freeze until completely solid (at least 1 hour)
Melt the Chocolate:
**Double Boiler Method:** Add the chocolate and oil to a heatproof bowl over a pot of simmering water. Stir occasionally until melted and smooth.
**Microwave Method:** Place the chocolate and oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until fully melted and smooth (about 1–2 minutes total).
Remove the frozen dates from the freezer.
Drizzle or dip them in the melted chocolate, then sprinkle with the chopped pistachios.
Let the chocolate set at room temperature or place the dates back in the freezer for a few minutes until firm.
Enjoy immediately or store in an airtight container in the fridge or freezer for up to two weeks.
