Gut Friendly Guac

Ingredients

  • 2 ripe avocados
  • cup finely chopped kimchi with a bit of brine
  • ¼ cup diced cherry tomatoes or ½ a Roma
  • 2 tbsp finely diced red onion
  • 1 tbsp fresh lime juice
  • ½ clove garlic microplaned
  • 1 tbsp chopped cilantro
  • Pinch of sea salt

Instructions

  • Mash avocados with lime juice in a bowl until mostly smooth.
  • Fold in kimchi, tomatoes, green onion, red onion, garlic.
  • Taste and adjust with salt or more lime.
  • Let it sit 5 minutes to let flavors meld.
  • Top with extra kimchi, cilantro or onion if desired.
