In a separate bowl, heat the peanut butter and maple syrup together in the microwave or on the stovetop until well combined.
Pour the wet mixture into the dry ingredients. Add the pumpkin puree and vanilla extract. Mix well, adding 1-2 tablespoons of milk if the batter is too thick.
Refrigerate the mixture for at least 30 minutes to firm up.
Roll the chilled mixture into bite-sized balls.
