Chicken Vegetable Bowl

A healthy meal filled with vegetables and grilled chicken.

Ingredients

BOWL

  • 2-3 organic chicken breasts
  • 4 boiled beets sliced 1/4" thick
  • 1 sweet potato sliced into disks about 1/4" thick
  • 1 avocado cubed
  • 1 cup cooked brown long grain rice
  • 1 cup arugula
  • 1 orange
  • garlic powder
  • sea salt & pepper
  • Olive Oil
  • Avocado Oil

VINAIGRETTE

  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar
  • sea salt & pepper

Instructions

  • Marinate chicken in a bit of avocado oil, 1/2 juice of orange, 1 tsp garlic powder, sea salt and pepper. Let sit for about an hour
  • Pre-heat oven to 400F and line baking sheet with parchment paper or silicone mat
  • Marinate the beets at the same time as the chicken. Olive oil, the other 1/2 of the juice of the orange, 1 tsp garlic powder, sea salt and pepper and let sit until ready to serve.
  • Clean and slice sweet potato (skin on) in a bowl add avocado oil, sea salt, garlic powder, pepper, roast in the oven for 25-30 minutes.
  • Cook rice according to cooking instructions. I use a rice cooker.
  • One all of this is done, it's time to create your bowl. Add in all the ingredients in portions that work for you.
  • Top with vinaigrette. Enjoy!
