Marinate chicken in a bit of avocado oil, 1/2 juice of orange, 1 tsp garlic powder, sea salt and pepper. Let sit for about an hour
Pre-heat oven to 400F and line baking sheet with parchment paper or silicone mat
Marinate the beets at the same time as the chicken. Olive oil, the other 1/2 of the juice of the orange, 1 tsp garlic powder, sea salt and pepper and let sit until ready to serve.
Clean and slice sweet potato (skin on) in a bowl add avocado oil, sea salt, garlic powder, pepper, roast in the oven for 25-30 minutes.
Cook rice according to cooking instructions. I use a rice cooker.
One all of this is done, it's time to create your bowl. Add in all the ingredients in portions that work for you.
Top with vinaigrette. Enjoy!
