Preheat oven @ 425 degrees + line baking sheet with parchment paper
Steam broccoli florets for 5 minutes until fork-tender, but do not overcook
Brush half the olive oil mixture on the baking sheet and add the broccoli on top
Using a glass, smash each broccoli floret until flattened
Brush the remainder of the olive oil mixture on top.
Sprinkle each one with Parmesan
Bake until golden and crispy on the outside, tender on the inside (about 15-20 mins)
