Clean and slice the fruit as directed.
Fill a large bowl with cold water.
Dip one rice paper wrapper into the water for a few seconds to soften.
Remove and carefully place it on a large plate or a cutting board.
Place a portion of the diced apples, mango strips, raspberries, sliced strawberries and mint (if using) on one side of the softened rice paper.
Fold in the top and bottom edges, then roll tightly from one side to the other.
Place the finished roll onto a plate with the folded side down.
Repeat with the remaining rice paper wrappers and fruit.
In a small bowl, mix together the Greek yogurt, maple syrup, lemon juice, lemon zest, and vanilla extract.
Serve the fruit summer rolls with the lemon vanilla yogurt dip on the side.
