Nosara Salad

Ingredients

  • 1 head roasted cauliflower
  • 1 small red onion
  • 1 head kale cut up
  • 1/3 cup sliced kalamata olives
  • 1/3 cup slivered almonds
  • 1/3 cup dates chopped small
  • *optional* Feta cheese

Cauliflower Seasonings:

  • 1 tsp paprika
  • 1 tsp oregano
  • 2 tbsp avocado oil

ACV Tahini Vinaigrette:

  • 1/4 cup tahini we suggest Tahini Goddess Classic Tahini
  • 3 tbsp Apple Cider Vinegar
  • 1/2 tbsp maple syrup
  • 1 tbsp olive oil
  • Salt & Pepper

Instructions

  • Preheat the oven to 375 F and prepare a baking tray with unbleached parchment paper. Toss cauliflower with seasonings and roast in a heated oven for 20-25 minutes. Until golden but not charred.
  • While your cauliflower is roasting, chop and prepare all other ingredients and vinaigrette.
  • Let cauliflower come to room temp and then combine all ingredients and toss with ACV Tahini Vinaigrette.
  • Serve with your favourite protein or on its own and ENJOY xo
