Make the Dough: In a food processor, combine oat flour, almond flour, cinnamon, maple syrup, cashew butter, and vanilla extract. Process until the mixture forms a smooth, pliable dough. If needed, scrape down the sides and pulse again.
Prepare the Filling: In the same (or a clean) food processor, blend the dates, pecans, water, and cinnamon until smooth. If the mixture is too thick, add a little more water, 1 tablespoon at a time, until spreadable.
Assemble: Place the dough between two sheets of parchment paper and roll it into a rectangular shape, about 1/4 inch thick. Spread the filling evenly over the dough.
Roll & Chill: Using the parchment paper to guide, carefully roll the dough into a tight log. Wrap it in parchment paper and refrigerate for at least 1 hour to firm up.
Slice & Serve: Once chilled, slice into rolls and enjoy!
