Pour 1 cup of tart cherry juice into a small saucepan. Sprinkle the gelatin evenly on top (don’t stir yet). Let it bloom for 5 minutes.
Gently heat the pan over low heat, stirring until the gelatin completely dissolves (don’t let it boil).
Add in the remaining 1 cup juice and your sweetener (honey or maple syrup). Stir until fully combined and smooth.
Pour the mixture into silicone molds or a lightly greased glass dish.
Chill in the refrigerator for 3+ hours until set
Pop out of molds or cut into squares.
