Vegan Holiday Spice Cookies

Ingredients

  • 2 tbsp ground flax
  • 1/4 cup Water
  • 1/2 cup Almond flour
  • 1/2 cup coconut sugar divided
  • 1/4 tsp fine grain sea salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 1/4 tsp allspice divided
  • 1 tsp vanilla extract
  • 1/3 cup creamy cashew or almond butter
  • optional; sprinkle of cane sugar

Instructions

  • Stir together the flax and water; set aside. In a large bowl mix together almond flour, 1/2 cup coconut sugar, salt, baking soda, cinnamon, 3/4 tsp allspice and nutmeg.
  • Add vanilla, almond butter and flax mixture, stir until combined (you might need two spoons or use your hands as the dough is thick)
  • Place the dough into the fridge for 1 hour prior to dividing and rolling them out.
  • Roll the dough into 10 equal balls and place on a parchment-lined pan, flattening slightly with your palm. Leave room between as they spread.
  • Bake at 375F for 10 minutes or until edges are just brown. Optional; sprinkle with cane sugar before baking. Let cool for 30 minutes before serving.
