The inspiration behind Fancy Peasant is Anastasia’s father, Fotios N. Ganias, who grew up in Vavouri, a small mountain village in Northern Greece. As a refugee, he escaped poverty and the Greek Civil War, migrating to the U.S., which he called “the greatest opportunity of his life.” At 16, he learned English, worked as a dish boy to support his family, put himself through college and medical school, and established himself as a successful ophthalmologist. Foti was a philanthropist, modern-day philosopher, lover of learning, and valued his family and role as Papou above everything else.
Anastasia started Fancy Peasant to bring a sense of simplicity, family, and love to the fast-moving, modern-day household. She emphasizes the art of living and cooking slowly, using her father’s humble culinary ethos as her guide. Through Fancy Peasant, she shares the healing powers of the kitchen, uncovering an essential part of her father’s legacy: the art of living and cooking slowly.

I’m so excited to be featured here! I’m Anastasia Ganias-Gellin, founder of Fancy Peasant, a
line of clean Greek pantry essentials that are both medicinal and delicious. I teach people how to cook longevity recipes from my village in Greece using our products. I believe that a healthy diet is key to longevity, which is why I’m thrilled to share this recipe with you!
