These Erewhon inspired Raw Cinnamon Rolls are next-level good! A must-try if you want a sweet, healthy treat. Recipe contributed by Jen @z.e.n.e.r.g.y

Raw Cinnamon Rolls

Ingredients

  • Ingredients
  • **Dough:**
  • - 1 cup oat flour
  • - 1/2 cup almond flour
  • - 1/3 cup maple syrup
  • - 1/2 cup unsweetened cashew butter
  • - 1 tsp vanilla extract
  • - 1/2 tsp Ceylon cinnamon *reduce to 1/4 tsp if using regular cinnamon*
  • **Filling:**
  • - 10 large pitted dates
  • - 1/2 cup pecans
  • - 1/4 cup water
  • - 3 tsp Ceylon cinnamon *use 1–2 tsp if using regular cinnamon*

Instructions

  • Make the Dough: In a food processor, combine oat flour, almond flour, cinnamon, maple syrup, cashew butter, and vanilla extract. Process until the mixture forms a smooth, pliable dough. If needed, scrape down the sides and pulse again.
  • Prepare the Filling: In the same (or a clean) food processor, blend the dates, pecans, water, and cinnamon until smooth. If the mixture is too thick, add a little more water, 1 tablespoon at a time, until spreadable.
  • Assemble: Place the dough between two sheets of parchment paper and roll it into a rectangular shape, about 1/4 inch thick. Spread the filling evenly over the dough.
  • Roll & Chill: Using the parchment paper to guide, carefully roll the dough into a tight log. Wrap it in parchment paper and refrigerate for at least 1 hour to firm up.
  • Slice & Serve: Once chilled, slice into rolls and enjoy!
