Tahini Cookies

Servings 9 cookies

Ingredients

  • 2 medium very ripe bananas mashed
  • 1/3 cup tahini well-stirred
  • 1 cup oat flour or rolled oats blended fine
  • Optional - 1/2 tsp baking soda + sugar free white chocolate chips

Instructions

  • Preheat oven to 350°F. Line a baking sheet.
  • Mash banana until smooth. Stir in tahini.
  • Fold in oat flour until a sticky dough forms.
  • Scoop 2 tbsp portions, flatten slightly.
  • Bake for 20-25 minutes until just set.
  • Cool on tray. They’ll firm as they rest.
