Tahini Cookies

Ingredients
- 2 medium very ripe bananas mashed
- 1/3 cup tahini well-stirred
- 1 cup oat flour or rolled oats blended fine
- Optional - 1/2 tsp baking soda + sugar free white chocolate chips
Instructions
- Preheat oven to 350°F. Line a baking sheet.
- Mash banana until smooth. Stir in tahini.
- Fold in oat flour until a sticky dough forms.
- Scoop 2 tbsp portions, flatten slightly.
- Bake for 20-25 minutes until just set.
- Cool on tray. They’ll firm as they rest.
