For many this recipe may seem obvious and may be something you already know how to make but I definitely didn’t and it is a great recipe to make weekly for dinner and then have leftovers. Roasted chicken is a comfort food staple, it’s healthy, tasty and super simple to make. I got this recipe from Gwyneth Paltrow’s “It’s All Good” cookbook and I have adjusted it a little but it’s a go-to for me.
This is super easy but looks so impressive and also tastes delicious. As mentioned earlier you can always use the leftovers for lunches or dinner. I like to shred up remainder of what’s left and use on salads or in bowls
Easy Roasted Chicken
Servings 6 people
Ingredients
- 4 lbs Organic Chicken cleaned well inside and out
- 3 tbsp avocado oil
- Coarse Sea Salt and Pepper to taste
- 1 tsp Chicken Seasoning
- ½ lemon
- ½ white onion
Instructions
- Preheat oven to 425F and get out a roasting pan
- In a small bowl combine your sea salt, pepper and chicken seasoning so it’s easily accessible
- Cover chicken in avocado oil rub it in and then evenly coat with sea salt, pepper and chicken seasoning. Pour some oil and seasoning in the cavity as well
- Put the lemon, onion into the cavity and tie up legs with cooking twine if needed
- Place roasting pan into oven for 1.5 hours, checking every 30 minutes and basting. I use an eclectic thermometer to make sure it’s cooked through around the 1 hour mark. As soon as chicken (not close to bone) gets to 165 degrees remove and let sit for 10 minutes minimum before cutting and serving.
