Gut Friendly Guac
Ingredients
- 2 ripe avocados
- ⅓ cup finely chopped kimchi with a bit of brine
- ¼ cup diced cherry tomatoes or ½ a Roma
- 2 tbsp finely diced red onion
- 1 tbsp fresh lime juice
- ½ clove garlic microplaned
- 1 tbsp chopped cilantro
- Pinch of sea salt
Instructions
- Mash avocados with lime juice in a bowl until mostly smooth.
- Fold in kimchi, tomatoes, green onion, red onion, garlic.
- Taste and adjust with salt or more lime.
- Let it sit 5 minutes to let flavors meld.
- Top with extra kimchi, cilantro or onion if desired.
