I love cooking Mexican dishes because the flavours are delicious and it’s easy to make them healthy. I always like adding this corn dish on the side, it’s the perfect addition to all my Mexican inspired meals and it’s super easy and quick to make.
This dish can also be made with fresh corn when it’s in season. Simply boil your corn, and cut it off the cob and follow same directions!
Mexican Corn Salad
Fresh and easy salad to accompany any meal.

Ingredients
RECIPE
- 1 bag frozen organic corn
- 1 tbsp avocado oil
- 3 green onions sliced thinly
- 1/8 cup cilantro- chopped finely
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
- ½ lime
- Salt & Pepper

DIRECTIONS
- In a large Skillet add oil and heat up. Add corn and sauté for about 3-4 mins until corn begins to brown and crisp up a bit
- Add in all spices and sauté another minute or so. Add in green onion and mix around for an additional 2 minutes
- Add in cilantro and mix around for no more than 1 minute and the remove skillet from heat.
- Transfer to serving dish and just before serving squeeze a little lime juice and sprinkle some extra cilantro and enjoy!
