This salad was originally created by naturopath, Christian Limoges. He has changed many lives in numerous ways in a very short amount of time. This is KG’s “go to” salad, she’ll often change it up swapping certain ingredients. The overall concept of this salad is lots of raw vegetables. 

If you plan to eat a salad or raw vegetables at each meal, it is a game changer to clean and cut in advance (I usually do it Sundays) and store them in your fridge already cut up and ready to go. Prepping in advance will make it really easy to throw into a bowl and serve! I often use my food processor on the shredding setting, and it makes things go much faster and easier. Vitality Salad

Course Salad
Prep Time 10 minutes
Servings 4 people

Ingredients

SALAD

  • 2 cups mixed greens lettuce of your choice, remember the greener the better
  • 1 cup endives sliced
  • ½ cup red cabbage shredded
  • ½ cup green cabbage shredded
  • 2 carrots shredded or chopped
  • 2 celery stalks sliced
  • ¼ cucumber sliced
  • ¼ red pepper sliced you can use other pepper colours as well
  • ¼ cup raw beets sliced
  • 1 small tomato cut
  • 2 tbsp parsley I often change up herbs for different flavours

DRESSING (makes 2 cups)

  • 2 tbsp Raw Honey
  • 1/2 cup Apple Cider Vinegar
  • 1/4 cup Coconut Aminos
  • 1 1/4 cup Olive Oil
  • Sea salt & Pepper

Instructions

  • Add all vegetables into your favourite salad or mixing bowl.
  • Mix all of the salad dressing ingredients together in a shaker bottle and mix them up. You can make the dressing in advance and store in the fridge it will stay good for a month
  • Toss dressing with salad and ENJOY!
