This salad is a staple in my husband, Kris’s family and it is actually incredible! Kris is Armenian and his father was born and raised in Ethiopia. Berbere is a key spice and ingredient used in Ethiopian dishes. The Avakian family uses this spice often and its a key ingredient in this salad. The spice is a mix of cumin, ginger, chilli, fenugreek, basil, garlic amongst other flavours, it’s delicious, different but loved by anyone who tries it. This spice can be found in Ethiopian markets and often around other spices.
Garnish with fresh parsley, serve with pita, flatbread, alongside your favourite protein, rice etc… this dish works so well with anything and is the perfect summer salad! Enjoy.
