Another one of my sister’s recipes, I love these Mediterranean meatballs. I don’t eat red meat often because I don’t digest it well but in moderation I enjoy it, especially these meatballs. They have a Middle Eastern flavour and really hit the spot! Kris is Armenian and these flavours were a staple in his home growing up and even he approves of these!
Gabi's Mediterranean Meatballs
Servings 4 people
Ingredients
- 1 lb organic ground beef
- 1.5 tbsp all spice
- 1 tbsp garlic powder
- 1 small white onion chopped small
- 1/4 cup of parsley chopped small
- 1 tbsp olive oil
- 3 tbsp pine nuts toasted on a pan first
Instructions
- Heat oven to 400F.
- Mix all ingredients together and form into balls. Arrange on a grill rack over a baking sheet (this will allow the fat and juices to get out).
- Bake for 15 minutes. Place under broiler for an additional 2 minutes on each side.
- Serve and enjoy.
