Hot summer days, means fun cocktails while outside enjoying the sun! These cocktails are the perfect addition to sip on while soaking in that vitamin D.
Here’s what the GLW team are currently loving this summer.

I’ve been loving this mocktail! If you’re looking to make it alcoholic, can swap the sparkling water for champagne or sparking wine.
- 2 ounces Tart Cherry Juice
- 3 ounces sparking water
- Ice
- juice of 1/2 lime.
I’m sure you’ve heard of an Aperol Spritz, but have you heard of a Limoncello Spritz! It’s even better! Once you try this, it’s bound to be your new favorite summer drink!
- 2 ounces limoncello
- 3 ounces Prosecco or other sparkling wine
- 1 ounce soda water
- Ice
- For the garnish: mint, lemon rounds

A bellini is an easy Prosecco cocktail to make yourself, consisting simply of Prosecco and peach puree.

- Prosecco
- Peach purée
How to make a Bellini
Fill your glass with around 1/3rd peach purée then top up the rest with Prosecco and there you have it.
The original Bellini recipe uses puréed white peaches, however as these are seasonal, yellow peaches or peach nectar are often substituted instead.
If you’d like to have a go at making the purée yourself you’ll need to peel several peaches, cut into wedges and place in a food processor with a couple of teaspoons of sugar.
Lemon Drop
Mix vodka, lemon juice and triple sec, shaken with ice to make this refreshing lemon drop cocktail. Dip the rim of the glass in sugar it you want that extra sweetness.

- 1 clementine juiced
- 1/4 lime juiced
- soda water
I like to mix the tequila, clementine, lime in a shaker with ice. Add ice to glass, pour from shaker cover with soda water and enjoy!
