Peanut butter is easily one of the best foods on the planet. One of my fave textures, and peanut butter cookies are a childhood favourite of mine. This is a healthier twist on a classic peanut butter cookie that my sister Tara (who is an amazing cook) makes all the time. This recipe is delicious, nutritious, contains very little sugar but hits the spot and fulfills those cravings. The recipe makes about 15 cookies.
Tara's Peanut Butter Cookies
Servings 15 cookies
Ingredients
- 1 cup natural peanut butter crunchy or smooth
- 1 egg
- 3 tbsp oat flour
- 2 tbsp flaxseed
- 2 tbsp maple syrup
- tsp vanilla
Instructions
- Preheat oven to 350F. Prepare a baking sheet with a silicone mat or parchment paper.
- Add all of the ingredients together into a mixing bowl or electric mixer.
- Scoop dough (about 1.5 tbsp/cookie) onto baking sheet.
- Flatten tops with fork or fingers and bake for 8-10 minutes until bottoms of cookies are browned. Let cookies cool before serving and enjoy.
