Another one of the dishes I am known for is my roasted broccoli almond salad. When I created this I remember being shocked at my ability to make something so delicious- the ingredients are liked by most but this side dish is definitely unique.
Not only is this recipe delicious – but it’s pretty too! Serve and enjoy, I know you guys will love it.
Roasted Broccoli Almond Salad

Ingredients
Ingredients For Salad
- 1 head broccoli chopped stems included
- ½ cup almonds
- ½ lemon
- 1 tbsp avocado oil
- 1 tsp garlic powder
- 1 tsp cumin
Ingredients For Dressing
- 2 tbsp olive oil
- 1 piece garlic minced
- 2 tbsp honey
- 1 tbsp Dijon
- ½ lemon juice
- 1 tsp balsamic vinegar
Instructions
- Pre-heat the oven to 425F.
- In a bowl add broccoli, olive oil, garlic powder, cumin, salt and pepper. Mix these all and then coat the broccoli. Transfer to a baking tray and bake for 15-20 minutes.
- At same time small baking dish bake almonds whole for 8-10 minutes.
- Remove almonds – let them cool and then chop up.
- Slice lemon into four thin slices, then cut into eighths.
- Whisk dressing ingredients together - add broccoli, almonds and lemon slices and combine all together and transfer to serving dish.
