I love buying produce that’s in season and mixing it to make a delicious side dish. We eat tons of vegetables and always like to switch it up and find new and creative ways to make them exciting. This dish can be made all year round and served with some wild rice, quinoa or any protein. It compliments any dish!
Roasted Mushroom Leek Zucchini Side Dish

Ingredients
- 2 zucchinis halved & sliced
- 1 package cremini mushroom quartered
- 1 large leek sliced
- ¼ cup dill
- 2 tbsp lemon zest
- 2 tbsp avocado oil
- 1 tsp oregano
- 1 tsp garlic powder
- Sea salt & Pepper
Instructions
- Preheat the oven to 400F. In a large mixing bowl combine zucchini, mushrooms and leeks. Add avocado oil, salt, pepper, garlic powder and oregano. Toss and coat veggies well.
- Pour tossed vegetables into a baking dish or pyrex and bake for 20-25 minutes, until vegetables are tender and golden.
- Remove from the oven, let cool for 5-10 minutes and top with dill and lemon zest, mix well, serve and enjoy!
