Living in Montreal, the winter season is tough. It gets dark early and is always cold, so I love to make lots of healthy soups to have for lunch and dinner. This one is my sweet potato squash coconut curry soup (try saying that fast!) and I promise it will make your mouth and heart melt. I like to top it with roasted chickpeas for added protein and crunch! It is just so yummy; I knew I had to share it.

This can be great as a side dish too, but I eat it as a meal. It is filled with all the good stuff your body needs. I like to make a big batch freeze some. It defrosts and warms up easily!
