I love this recipe so much! Its hearty but light and makes for the best leftovers or next day lunches! I always make extra!
Zucchini Boats a La KG
Servings 4
Ingredients
- 4 Zucchini sliced lengthwise, seeds scooped out
- 1 lb ground turkey chicken or beef, organic
- 2 carrots diced
- 2 celery diced
- 1 onion diced
- 1 jar tomato sauce I use Rao’s or Carbone
- Sea salt & pepper
- 1 tbsp Avocado oil or ghee or olive oil
- Optional parmesan cheese
Instructions
- Preheat the oven to 400F, line a baking sheet with parchment paper.
- Prep your zucchini, slice lengthwise and then using a spoon, scoop out the seeds. You should be left with enough space to “stuff” or fill the zucchini with your meat filling. Set aside on the prepared baking sheet.
- Make your filling, in a skillet, over medium heat, add some avocado oil, ghee or olive oil. When hot add your veggies (carrots, celery, onion), saute about 4-6 minutes until they start to soften.
- Add in your meat, breaking it up and combining with the veggies. Add a little salt and pepper and saute everything together until meat is 80% cooked through.
- Add your jar of tomato sauce and combine. Let it all simmer for 10-20 minutes or as long as you have on low heat.
- Once your filling is ready, scoop it evenly into your prepared zucchini boats. Feel free to top with a little parmesan cheese, it really does enhance the flavor but its not needed.
- Bake zucchini boats for 20 minutes. You dont want to over cook them because you want the zucchini to remain firm and hold up, if you cook them for to long the zucchini can get too soft! Serve and enjoy!
