It’s corn season and I have been obsessing over this recipe! I follow the principals of food combining and love to pair a grain with my veggies. I started making this a few weeks ago with a big salad and it’s so filling and tasty and I literally crave it now! While corn is in season it’s the time to make this!
GLW Style Mexican Street Corn
Servings 1 serving
Ingredients
- 1 Ear of Corn preferably Non-GMO, organic
- 1 tsp ghee butter butter or vegan butter
- 1/2 tsp chilli lime seasoning this can be subbed for cayenne pepper and lime zest
- 1 tsp lime juice
- 1 tbsp parmesan or vegan parmesan
- 1 tbsp cilantro chopped
Instructions
- On a BBQ (if you have access to one), cook your corn, husk on or off, this is at your preference. You can also roast corn in the oven or boil, cook to your liking.
- Once corn is cooked, top with ghee or butter, sprinkle with lime juice, chilli, lime seasoning, parmesan and cilantro. Serve and enjoy!
