When I got married my sisters threw me a bridal shower and made me the cutest cookbook with recipes collected from friends and family. One of the recipes in the book are these incredible, healthy seed cookies, by my Mom’s friend Heather. I have made them for years, they remind me of a better, healthier version of sesame snaps! These are a great afternoon snack and filled with nutritious ingredients.

Heather's Seed Cookies

Course Snack
Prep Time 15 minutes
Cook Time 30 minutes
Servings 18 cookies

Ingredients

  • 1 ¼ cup sesame seeds
  • 1 cup slivered almonds
  • ½ cup chopped walnuts
  • 1 cup pumpkin seeds shelled
  • 1 cup sunflower seeds shelled and unsalted
  • ¾ cup coconut sugar
  • 3 egg whites

Instructions

  • Preheat oven 325F. In a large bowl, combine the almonds, walnuts and seeds and stir together.
  • In a separate small bowl, whisk together the egg whites and add the coconut sugar. Pour the egg white mixture into the seed/ nut mixture and use your hands to combine well.
  • Line 2-3 baking sheets with silicone mat or parchment paper. Using a tbsp or scooper, scoop heaping tbsp onto the baking trays, leaving 1 inch between each scoop. Flatten with your fingertips.
  • Place into the oven and bake for about 20-30 minutes, making sure the cookies get golden but don’t burn.

Notes

These may sound boring but these are the farther thing and these stay good for up to 2 weeks in a cookie jar!
