This quick and easy chicken recipe is going to be your new summer staple! Can be done on the barbecue or the stove.
Lemon Parsley Grilled Chicken
Servings 4 servings
Ingredients
- 4 chicken breasts sliced in half to make thinner
- 3 tbsp olive oil
- 1 tbsp dijon mustard
- 1 tsp garlic powder
- Zest of 1 lemon
- 2 tbsp Italian parsley chopped
- Juice of 1 lemon
- Sea salt & pepper
Instructions
- Preheat oven to 375F and prepare a grill pan or skillet. This recipe can also be made on the barbeque, in which case pre- heat barbeque to medium-high heat.
- Clean and dry chicken. In a large mixing bowl combine all ingredients EXCEPT lemon juice and evenly coat chicken.
- Let chicken marinate for at least 30 minutes or up to 24 hours. Right before you are ready to cook add the juice of 1 lemon and coat evenly.
- Heat oven safe grill pan or cast iron over medium-high heat, add some avocado or olive oil cooking spray and grill chicken 3-4 minutes each side and then transfer to oven for 8-10 minutes or until chicken is cooked through.
- Garnish with a little extra drizzle of lemon juice, lemon zest and parsley and ENJOY!
