I am a huge fan of sweet potato, this recipe is generally made with Japanese Yams, which are purple on the exterior, white on the interior. A little denser than a traditional sweet potato also filled with amazing nutrients including hyaluronic acid! These are naturally sweet but not as sweet as regular sweet potatoes. This recipe was adapted from a restaurant that me and my family used to eat at all the time that no longer exists. I recreated it recently and have not stopped eating this! We love to have it as a meal with a salad or with other roasted vegetables.
