Pumpkin Spice Energy Bites

Ingredients
- - 1 1/2 cups oat flour
- 1/4 cup almond flour
- 1/4 cup shredded unsweetened coconut
- 1 teaspoon pumpkin pie spice
- 1/2 cup pumpkin puree not pumpkin pie filling
- 1 teaspoon vanilla extract
- 1/2 cup peanut butter or any nut butter of choice
- 1/2 cup maple syrup
- 1-2 tablespoons milk of choice optional
- Optional: sugar-free white chocolate for drizzling or dipping
Instructions
- In a large mixing bowl, combine the oat flour, almond flour, shredded coconut, and pumpkin pie spice. Mix well.
- In a separate bowl, heat the peanut butter and maple syrup together in the microwave or on the stovetop until well combined.
- Pour the wet mixture into the dry ingredients. Add the pumpkin puree and vanilla extract. Mix well, adding 1-2 tablespoons of milk if the batter is too thick.
- Refrigerate the mixture for at least 30 minutes to firm up.
- Roll the chilled mixture into bite-sized balls.
- Enjoy the bites as they are, or melt your favorite sugar-free white chocolate and dip or drizzle it over the bites for an extra treat.
