This is a side dish I used to make a lot years ago and kind of forgot about. Recently I started making it again and it’s actually delicious and a good option for a healthy vegetable side dish. Beets have so many amazing health benefits so getting them in when you can is always great!
Simple, tasty and somewhat unexpected side dish that everyone loves!
Roasted Beets
Quick and easy side dish to enhance any meal!

- Oven
- Bowl
- Baking sheet
- Parchment paper or silicone mat
Ingredients
RECIPE
- 2 cups raw golden beets or regular beets- chopped into cubes
- 1 tbsp avocado oil
- 1 tsp garlic powder
- ¼ tsp cayenne pepper
- Sea salt & pepper
- ½ lemon juice
Instructions
DIRECTIONS
- Preheat the oven to 400F and line a baking sheet with parchment paper or silicone mat.
- In a large mixing bowl add in your beets, oil, salt, pepper and spices. Toss to coat evenly.
- Spread onto a prepared baking sheet. Bake for 30-35 minutes until beets are still firm but tender in the middle ( a fork should pierce easily).
- Transfer to a serving dish and squeeze the juice of ½ a lemon and enjoy!
