My sister Tara sent me this recipe one winter and it has become a staple in my household. So delish and so easy to make! Follow along below!
Tara's Maple Thyme Squash
Servings 4 people
Ingredients
- 2 medium squash cut into ¼ inch slices, halved lengthwise, seeded. Can use Delicata or Acorn
- 1 red onion cut into ½ inch rings, halved lengthwise
- 5 garlic cloves peeled and minced
- 4 fresh thyme sprigs
- 1/2 tsp chili flakes
- 2 tbsp avocado oil
- 2 tbsp maple syrup
- Salt and pepper
Instructions
- Pre-heat the oven to 425F, prep baking tray with silicone mat or parchment paper.
- Place the squash, red onion, garlic, thyme and red pepper flakes into a large bowl. Add in avocado oil and maple syrup. Sprinkle generously with salt and pepper, toss to coat.
- Transfer to prepared baking tray, spread out evenly and roast in the oven for 25-30 minutes or until starting to brown. Serve and enjoy.
Notes
This dish is the perfect blend of flavours, and can be made with butternut squash as well.
I made this and I could tell it would be delicious with less chili flakes, but it was almost inedibly spicy as written. Wondering if there is a typo and the recipe is supposed to include 1/2 teaspoon of chili flakes instead of 1/2 tablespoon? Just wanted to give the heads up! Can’t wait to make again and try with less ❤️
